Crispy Potato Herring with Chives Vinaigrette

  • Peel and cut the two large potatoes into thin strips. Mind not to wash them to avoid rinsing off the starch.
  • Mix with the finely chopped red onion and the bacon strips.
  • Bake in butter and cut into shape.
  • Place the drained herring fillets on top and arrange them together.
  • Finish with a stripe of Chives Vinaigrette.
